Ingredients

  • 2 lb carrots peeled and sliced 1/4 inch thick on the diagonal
  • 0.25 cup water
  • 3 tbsp unsalted butter
  • 3 tbsp honey
  • 0.5 tsp kosher salt

Equipment

  • 1 12-inch skillet with lid

Method

  1. Combine the carrots, water, butter, honey, and salt in a 12-inch skillet with a lid.
  2. Bring to a boil over medium-high heat.
  3. Cover, reduce the heat to medium-low, and simmer for 8–12 minutes, stirring once, until the carrots are tender when pierced with a fork.
  4. Uncover and cook over medium-high heat for 3–5 minutes, stirring often, until the liquid reduces to a glossy glaze that coats the carrots.

Notes

For the glossiest finish, stir often during the uncovered cooking step so the glaze coats the carrots evenly. Refrigerate leftovers for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free version, use plant-based butter.
