Ingredients

For the broccoli
  • 1 tbsp olive oil
  • 1.5 lb broccoli florets
  • 0.5 cup water
For the cheese sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1.5 cup sharp cheddar cheese shredded

Equipment

  • 1 12-inch skillet

Method

Cook the broccoli
  1. Heat the olive oil in a 12-inch skillet over medium heat, then add the broccoli and water.
  2. Cover and cook for 4 to 6 minutes, until the broccoli is bright green and fork-tender.
  3. Transfer the broccoli to a plate.
  4. Carefully pour off any water remaining in the skillet.
Make the cheese sauce
  1. Melt the butter in the same skillet over medium heat.
  2. Add the flour and whisk for 1 minute.
  3. Gradually whisk in the milk until smooth.
  4. Add the salt and pepper.
  5. Bring the sauce to a gentle simmer, whisking.
  6. Cook for 2 to 3 minutes, until thickened.
  7. Reduce the heat to low and whisk in the cheddar a handful at a time until smooth.
Combine and serve
  1. Return the broccoli to the skillet and stir gently to coat it in the cheese sauce.
  2. Serve hot.

Notes

For the smoothest sauce, whisk the milk in gradually before bringing it to a simmer. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the cheese sauce may separate. For a lactose-free option, use lactose-free milk and a suitable lactose-free cheddar.
