Chicken
  • 8 chicken thighs bone-in, skin-on; trimmed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
BBQ Sauce
  • 1.5 cup barbecue sauce store-bought or homemade
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves, minced
  • 0.5 tsp smoked paprika
Garnish
  • 2 tbsp fresh chopped parsley or chives
  • 1 tsp toasted sesame seeds optional

Method
 

Season the chicken
  1. Pat chicken thighs dry, then season all over with salt, black pepper, smoked paprika, garlic powder, and onion powder.
Mix the sauce
  1. Whisk barbecue sauce, apple cider vinegar, brown sugar, Worcestershire sauce, minced garlic, and smoked paprika until smooth.
Layer the crockpot
  1. Place chicken thighs in the bottom of the slow cooker in a single layer, then pour the BBQ sauce mixture evenly over the top so each thigh is coated.
Slow cook
  1. Cover and cook on LOW for 6–7 hours (or HIGH for 3–4 hours) until chicken is fork-tender and easily pulls apart, reaching an internal temperature of at least 165°F.
Broil for color (optional)
  1. Transfer chicken to a foil-lined baking sheet, brush with extra sauce from the crockpot, and broil at 500°F for 3–4 minutes until the skin caramelizes and turns sticky at the edges.
Rest and shred or serve whole
  1. Let chicken rest 5 minutes, then serve whole with extra sauce spooned on top or shred and toss back into the sauce for pulled BBQ chicken.
Garnish and serve
  1. Top with fresh chopped parsley or chives and toasted sesame seeds (if using) before serving.

Notes

For extra sticky sauce, spoon some of the reduced juices over the thighs halfway through broiling. Store leftovers in the refrigerator up to 4 days in an airtight container; reheat gently in the microwave or on the stovetop with a splash of sauce. Freezing is yes: cool, portion, and freeze up to 3 months, then thaw overnight in the fridge and reheat until hot. For a lighter option, choose a no-sugar-added or lower-sugar barbecue sauce to reduce sweetness without changing the cooking method.
