Cook the aromatics and turkey
- Heat the olive oil in a large Dutch oven over medium-high heat until it shimmers slightly. Add the onion and red bell pepper and cook for 4–5 minutes until softened.
- Stir in the garlic and cook for 30 seconds until fragrant, scraping any browned bits from the bottom.
- Add the ground turkey and cook for 6–8 minutes, breaking it into small crumbles, until no pink remains.
Build the chili
- Stir in the chili powder, ground cumin, smoked paprika, dried oregano, ground cinnamon, kosher salt, and black pepper. Cook for 1 minute to toast the spices, until fragrant and slightly darker.
- Add the pumpkin puree, black beans, kidney beans, fire-roasted diced tomatoes, low-sodium chicken broth, tomato paste, and maple syrup. Stir well until everything is evenly combined.
Simmer and finish
- Bring the chili to a gentle simmer. Reduce the heat to medium-low and cook uncovered for 20–25 minutes, stirring occasionally, until thickened.
- Stir in the fresh lime juice and simmer for 1 minute, using the surface bubbles as a visual cue. Taste and adjust the seasoning if necessary.
Serve
- Ladle the chili into deep bowls. Top each serving with shredded cheddar cheese, sour cream, diced avocado, thinly sliced green onions, and chopped fresh cilantro.
Notes
Pro tip: Let the chili thicken during the uncovered simmer—if it looks thin, continue cooking 5–10 minutes more. Store in an airtight container in the refrigerator for up to 4 days; freeze up to 3 months (leave out the lime juice and toppings until reheating). For a lighter option, use reduced-fat cheddar and Greek yogurt in place of sour cream.
