Ingredients

  • 1 lb green beans trimmed
  • 3 tbsp olive oil divided
  • 0.5 tsp kosher salt divided
  • 0.25 tsp black pepper divided
  • 3 cloves garlic minced
  • 1 tbsp parsley chopped fresh
  • 1 tsp thyme dried
  • 4 salmon fillets 6-ounce each, skin-on

Equipment

  • 1 large rimmed 18x13-inch sheet pan

Method

  1. Preheat the oven to 425°F.
  2. Line a large rimmed 18x13-inch sheet pan with parchment paper.
  3. Toss the green beans with 1 tablespoon olive oil, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper.
  4. Spread the green beans on the sheet pan.
  5. Roast the green beans for 10 minutes.
  6. Meanwhile, stir together the remaining 2 tablespoons olive oil, garlic, parsley, thyme, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper.
  7. Brush the mixture over the salmon fillets.
  8. Remove the pan from the oven.
  9. Arrange the salmon among the green beans.
  10. Return the pan to the oven for 10–14 minutes, until the salmon reaches 145°F in the thickest part and the beans are tender.

Notes

Avoid crowding the sheet pan so the green beans roast evenly. Refrigerate leftovers for up to 3 days; freezing is possible, though the salmon and beans may soften after thawing. For a lower-sodium version, reduce the kosher salt to taste.
