Ingredients
  

Olive oil
  • 1 tbsp olive oil
Mild Italian sausage
  • 1 lb mild Italian sausage Casings removed.
Vegetables
  • 1 yellow onion Diced.
  • 2 carrots Diced.
  • 2 celery stalks Diced.
  • 4 clove garlic Minced.
Seasonings
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Broth and beans
  • 6 cup low-sodium chicken broth
  • 2 can (15 oz) cannellini beans Drained and rinsed.
Kale and finish
  • 4 cup chopped kale Tough stems removed.
  • 1 tbsp fresh lemon juice
  • 0.25 cup grated Parmesan cheese

Method
 

Brown the sausage
  1. Heat olive oil in a large Dutch oven over medium-high heat. Add mild Italian sausage and cook for 5–7 minutes, breaking it into bite-size crumbles until browned.
Soften the vegetables
  1. Add diced yellow onion, diced carrots, and diced celery to the Dutch oven. Cook over medium heat for 5–6 minutes until the vegetables begin to soften.
Bloom the aromatics
  1. Stir in minced garlic, Italian seasoning, and crushed red pepper flakes. Cook for 30–60 seconds until fragrant.
Simmer the soup
  1. Pour in low-sodium chicken broth. Add drained and rinsed cannellini beans, salt, and black pepper, then stir well.
Cook until tender
  1. Bring the soup to a gentle boil. Reduce the heat and simmer uncovered for 12–15 minutes until the vegetables are tender.
Cook the kale
  1. Stir in chopped kale. Simmer for another 3–5 minutes until the kale becomes tender while retaining its green color.
Finish with lemon and adjust seasoning
  1. Stir in fresh lemon juice. Taste and adjust the seasoning if needed.
Serve
  1. Ladle the soup into bowls. Finish with grated Parmesan cheese and serve warm.

Notes

Pro tip: keep the kale simmer time tight (3–5 minutes) so it stays bright green and doesn’t turn dull. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently on the stovetop. Freezing is not recommended because kale can soften too much after thawing. For a dairy-light swap, use Pecorino Romano in a smaller amount or omit the Parmesan and add extra lemon to brighten the flavor.
