Ingredients

Make the truffles
  • 1 package (8 oz) cream cheese softened
  • 0.5 cup pumpkin puree canned
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 0.25 tsp kosher salt
  • 1.5 cup graham cracker crumbs finely crushed
Coat the truffles
  • 12 oz white chocolate melting wafers

Equipment

  • 1 rimmed baking sheet
  • 1 hand mixer
  • 1 microwave

Method

Make the truffles
  1. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, beat the cream cheese with a hand mixer until smooth, about 1 minute.
  3. Beat in the pumpkin puree, powdered sugar, vanilla, pumpkin pie spice, and salt until smooth.
  4. Stir in the graham cracker crumbs until evenly combined.
  5. Cover the bowl and refrigerate for 1 hour, until the mixture is firm enough to scoop.
  6. Scoop the mixture into 1-tablespoon portions.
  7. Roll the portions into balls.
  8. Arrange the balls on the prepared baking sheet and freeze for 20 minutes, until firm.
Coat the truffles
  1. Microwave the white chocolate wafers in a heatproof bowl at 50% power in 30-second bursts, stirring after each, for 1-2 minutes, until smooth.
  2. Dip each truffle in the melted chocolate and let excess chocolate drip back into the bowl.
  3. Return the truffles to the baking sheet.
  4. Refrigerate the truffles for 15-20 minutes, until the coating is set.

Notes

For neat dipping, keep the truffles firm and work in batches so they do not soften. Store covered in the refrigerator for up to 5 days; freeze for up to 2 months. For a gluten-free option, use certified gluten-free graham crumbs and check that the white chocolate wafers are gluten-free.
