Make the truffles
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, beat the cream cheese with a hand mixer until smooth, about 1 minute.
- Beat in the pumpkin puree, powdered sugar, vanilla, pumpkin pie spice, and salt until smooth.
- Stir in the graham cracker crumbs until evenly combined.
- Cover the bowl and refrigerate for 1 hour, until the mixture is firm enough to scoop.
- Scoop the mixture into 1-tablespoon portions.
- Roll the portions into balls.
- Arrange the balls on the prepared baking sheet and freeze for 20 minutes, until firm.
Coat the truffles
- Microwave the white chocolate wafers in a heatproof bowl at 50% power in 30-second bursts, stirring after each, for 1-2 minutes, until smooth.
- Dip each truffle in the melted chocolate and let excess chocolate drip back into the bowl.
- Return the truffles to the baking sheet.
- Refrigerate the truffles for 15-20 minutes, until the coating is set.
Notes
For neat dipping, keep the truffles firm and work in batches so they do not soften. Store covered in the refrigerator for up to 5 days; freeze for up to 2 months. For a gluten-free option, use certified gluten-free graham crumbs and check that the white chocolate wafers are gluten-free.
