Ingredients
  

Watermelon
  • 4 cup watermelon, cubed
Peaches
  • 3 ripe peaches, sliced
Feta and herbs
  • 0.5 cup crumbled feta cheese
  • 0.25 cup fresh mint leaves, chopped
  • 0.25 cup thinly sliced red onion
Honey-lime dressing
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 0.25 tsp sea salt
  • 0.125 tsp black pepper

Method
 

Assemble the salad
  1. Add the watermelon, peaches, red onion, and mint to a large serving bowl (no heat required).
  2. In a small bowl, whisk together the lime juice, honey, olive oil, sea salt, and black pepper until the dressing looks smooth.
  3. Pour the dressing over the fruit mixture.
  4. Gently toss to combine so the fruit is lightly coated.
  5. Sprinkle the feta cheese over the top for a creamy finish.
  6. Garnish with additional mint leaves for a fresh, bright look.

  1. Serve immediately, or chill for 15 minutes in the refrigerator before serving to firm up the flavors.

Notes

For best texture, slice peaches right before assembling and keep the salad uncovered only for a short time—fruit releases juice as it sits. Store covered in the refrigerator up to 1 day; the watermelon will soften, but it’s still tasty. Freezing is not recommended. If you want a dairy-light option, use crumbled goat cheese or a feta-style plant-based cheese (flavor will be slightly different).
