Soften and assemble
- Allow the vanilla ice cream to soften for 5–10 minutes so it becomes scoopable.
- Place six soft sugar cookies flat-side up on a sheet pan.
- Scoop vanilla ice cream onto each cookie, keeping the layer even.
- Top with the remaining cookies and gently press together to form sandwiches.
- Freeze the sandwiches for 30 minutes to firm them slightly.
Coat and freeze
- Mix red sprinkles, blue sprinkles, and white star sprinkles in a shallow bowl until evenly combined.
- Stir in mini white chocolate chips if using to distribute them through the sprinkle mixture.
- Roll the edges of each ice cream sandwich in the sprinkle mixture so the sides are coated.
- Freeze for at least 1 hour until firm.
- Serve immediately, or keep the sandwiches frozen until ready to enjoy.
