Ingredients
  

Waffle Layers
  • 8 round waffles Homemade or frozen; toast until golden and crisp.
  • 2 tbsp powdered sugar For a light dusting and finishing.
Cream Filling
  • 2 cup heavy whipping cream Beat until stiff peaks form.
  • 0.25 cup powdered sugar Sweetens the whipped cream.
  • 1 tsp vanilla extract Adds flavor to the filling.
Berry Layers
  • 2 cup strawberries Sliced.
  • 1.5 cup blueberries Fresh or thawed.
Garnish
  • 1 extra strawberries Additional slices for the top.
  • 1 extra blueberries Additional berries for the top.
  • 1 fresh mint leaves Optional.

Method
 

Toast and cool the waffles
  1. Toast the round waffles until golden and crisp, about 5–7 minutes in a preheated 425°F oven, then remove to a rack or tray.
  2. Let the toasted waffles cool completely, 10–15 minutes, so the cream won’t melt when assembled.
Make the whipped cream filling
  1. Beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form, 3–5 minutes, looking thick and holdable.
Assemble the patriotic berry waffle cake
  1. Place one waffle on a serving platter as the first layer, leaving a flat base for stacking.
  2. Spread an even layer of whipped cream over the waffle with a spatula, covering the surface to the edges.
  3. Add a berry layer of sliced strawberries and blueberries, spreading into an even colorful layer with minimal gaps.
  4. Repeat with the remaining waffles, whipped cream, and berry layers until all waffles are used, keeping layers level.
  5. Finish by adding whipped cream on top so the center is fully covered for a creamy cap.
  6. Decorate with extra strawberries and extra blueberries, then add fresh mint leaves if using, for a fresh look.
  7. Dust lightly with powdered sugar, using a fine sprinkle so the top shows a patriotic speckle.
Chill and serve
  1. Chill for 30 minutes before serving, until the layers set slightly and the cream looks firm.
  2. Slice and serve, using the crisp waffles for clean cuts and visible berry layers.

Notes

For the cleanest slices, chill just until set (about 30 minutes) rather than longer, and make sure the waffles are fully cool before adding whipped cream. Store leftovers covered in the refrigerator up to 2 days; freezing is not recommended because the berries and whipped cream texture can soften. Dietary swap: use lactose-free heavy cream for a lactose-reduced version while keeping the same whipped texture.
