Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian turkey sausage uncooked, casings removed
  • 1 yellow onion medium, diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.25 tsp crushed red pepper flakes
  • 1 can (15 oz) cannellini beans drained and rinsed
  • 1 can (14.5 oz) petite diced tomatoes with their juices
  • 0.75 cup chicken broth
  • 5 oz baby spinach
  • 1 tbsp lemon juice

Equipment

  • 1 12-inch deep skillet

Method

  1. Heat the olive oil in a 12-inch deep skillet over medium heat.
  2. Add the turkey sausage and cook for 6–8 minutes, breaking it into small pieces, until browned and it reaches 165°F.
  3. Add the onion and cook for 4–5 minutes, stirring occasionally, until softened.
  4. Stir in the garlic, Italian seasoning, and red pepper flakes and cook for 30 seconds.
  5. Stir in the beans, tomatoes, and chicken broth and bring to a simmer.
  6. Cook uncovered for 8–10 minutes, stirring occasionally, until the mixture is hot and slightly thickened.
  7. Stir in the spinach and cook for 1–2 minutes, until wilted.
  8. Stir in the lemon juice and serve.

Notes

For best texture, cook the sausage until browned and it reaches 165°F. Refrigerate leftovers for up to 4 days; freeze for up to 3 months, though the spinach may soften after thawing. For a lower-sodium option, use low-sodium chicken broth.
