Cook the turkey and aromatics
- Heat the olive oil in a large deep skillet over medium-high heat until shimmering.
- Add the ground turkey and cook for 5–7 minutes, breaking into small crumbles until no pink remains.
- Stir in the yellow onion and cook for 3–4 minutes until softened and lightly translucent.
- Add the garlic, Italian seasoning, smoked paprika, kosher salt, and black pepper; cook for 30 seconds until fragrant.
- Stir in the tomato paste and cook for 1 minute to deepen its flavor, coating the turkey and onions.
Simmer pasta in the sauce
- Add the diced tomatoes, chicken broth, and uncooked penne, stirring until evenly combined.
- Bring to a gentle boil, then reduce heat to medium-low, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is al dente and the liquid turns into a thick sauce.
Wilt greens and melt cheese
- Fold in the baby spinach and cook for 1–2 minutes until wilted, keeping the skillet covered only if needed to speed wilting.
- Sprinkle the mozzarella and Parmesan over the pasta, cover, and cook for 2–3 minutes until the cheese melts and looks glossy.
- Finish with fresh basil and serve straight from the pan.
Notes
For best texture, simmer until the sauce visibly thickens around the penne—add 1–2 tbsp extra broth only if your pasta is still firm. Store leftovers in the refrigerator up to 3 days; reheat gently with a splash of broth. Freeze yes, but expect softer pasta after thawing. If you want a lighter option, use part-skim mozzarella and reduce Parmesan slightly without changing the method.
