Method
- Heat a 6-quart Dutch oven over medium heat, add the walnuts, and toast for 4 to 5 minutes, stirring often, until fragrant; transfer to a bowl.
- Add the olive oil to the pot, then add the onion and bell pepper and cook for 6 to 8 minutes, stirring occasionally, until softened.
- Stir in the garlic, chili powder, cumin, smoked paprika, oregano, and tomato paste; cook for 1 minute, stirring constantly.
- Stir in the lentils, crushed tomatoes, vegetable broth, salt, and black pepper, scraping up any browned bits from the bottom of the pot; bring to a boil.
- Reduce the heat to maintain a gentle simmer, cover, and cook for 25 minutes, stirring occasionally.
- Stir in the kidney beans and toasted walnuts, then simmer uncovered for 10 to 15 minutes, stirring occasionally, until the lentils are tender and the chili is thick.
- Remove the pot from the heat and stir in the apple cider vinegar.
Notes
Toast the walnuts until fragrant to build their savory, meaty flavor. Refrigerate leftovers for up to 4 days; this chili freezes well. For a nut-free version, use toasted pepitas instead of walnuts.
