- Set a rack in a 9x13-inch roasting pan.
- Pat the turkey breast dry with paper towels.

- Set the turkey breast-side up on the rack.
Make the herb butter

- Spread the herb butter evenly underneath the skin.
Season the skin
- Rub the olive oil over the skin.
- Season evenly with the kosher salt and black pepper.
Make the glaze
- Combine the maple syrup, bourbon, Dijon mustard, and apple cider vinegar in a small saucepan.
- Simmer over medium-low heat for 5 to 7 minutes, stirring occasionally, until slightly thickened.
Roast and glaze the turkey
- Roast uncovered at 425°F for 20 minutes.
- Reduce the oven to 350°F and continue roasting until the thickest part of the breast registers 150°F, about 1 1/4 to 1 3/4 hours more; insert the thermometer without touching bone.
- Brush the turkey with half the glaze.
- Roast for 10 minutes.
- Brush with the remaining glaze.
- Continue roasting until the thickest part registers 165°F, about 5 to 15 minutes more.
Rest the turkey
- Transfer the turkey to a cutting board.
- Tent loosely with foil and rest for 20 minutes before carving.
Notes
For an accurate temperature reading, insert the thermometer into the thickest part without touching bone. Refrigerate leftovers for 3 to 4 days; freeze leftovers for up to 3 months. For a dairy-free variation, use dairy-free butter in place of the unsalted butter.
