Ingredients
  

Espresso or coffee
  • 1 cup strong brewed espresso or coffee Use cooled.
Molasses and vanilla
  • 2 tbsp molasses
  • 1 tsp vanilla extract
Heavy cream
  • 1.5 cups heavy cream Keep cold; beat until medium peaks.
Mascarpone cream
  • 8 oz mascarpone cheese Softened.
  • 0.5 cup powdered sugar
  • 1 tsp ground cinnamon
  • 0.75 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
Gingerbread cookies
  • 24 crisp gingerbread cookies Dip quickly to avoid sogginess.
  • 4 gingerbread cookies Crush for topping.
Cocoa powder
  • 2 tbsp unsweetened cocoa powder Dust top and finish with crushed cookies.

Method
 

Make the coffee dip and mascarpone cream
  1. Whisk the cooled strong brewed espresso or coffee, molasses, and vanilla extract in a shallow bowl until combined, so everything looks uniformly dark and fragrant.
  2. Beat the cold heavy cream in a large bowl for 3–4 minutes until medium peaks form, with the cream holding its shape but still looking creamy.
  3. Mix the softened mascarpone cheese, powdered sugar, ground cinnamon, ground ginger, ground nutmeg, and ground cloves in a mixing bowl until smooth and evenly speckled with spices.
  4. Fold the whipped heavy cream gently into the mascarpone mixture until thick and evenly combined, avoiding deflating the cream.
Layer, chill, and finish
  1. Dip each crisp gingerbread cookie quickly into the espresso mixture, keeping it just long enough to coat without becoming soggy.
  2. Arrange half of the dipped crisp gingerbread cookies in a snug layer in an 8-inch square serving dish.
  3. Spread half of the mascarpone cream evenly over the cookies.
  4. Repeat with the remaining dipped crisp gingerbread cookies and the remaining mascarpone cream, leveling the top as you go.
  5. Refrigerate for at least 6 hours, preferably overnight, until the gingerbread layers soften and the cream sets.
  6. Dust the top evenly with unsweetened cocoa powder for a uniform dark finish.
  7. Scatter the crushed gingerbread cookies over the surface just before serving for added crunch and visible gingerbread pieces.

Notes

Pro tip: chill the cream and avoid soaking the cookies—quick dips create soft layers after refrigeration without a watery texture. Store covered in the refrigerator for up to 3 days; freezing isn’t recommended because the cookies and cream can separate. For a lighter option, you can use part-skim mascarpone-style cheese, but keep the heavy cream amount the same to maintain the creamy set.
