Ingredients

For the chicken and apples
  • 1 tbsp olive oil divided
  • 6 chicken thighs bone-in, skin-on (about 2.5 pounds)
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 firm apples medium, such as Honeycrisp or Granny Smith, cut into 1-inch wedges
For the maple glaze
  • 0.33 cup pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 cloves garlic minced
  • 0.5 tsp dried thyme

Equipment

  • 1 9x13-inch baking dish
  • 1 small saucepan

Method

Prepare the chicken and apples
  1. Heat the oven to 425°F.
  2. Brush a 9x13-inch baking dish with 1 teaspoon of the olive oil.
  3. Pat the chicken thighs dry, season all over with the salt and pepper, and arrange them skin side up in the dish.
  4. Toss the apple wedges with the remaining 2 teaspoons olive oil and set aside.
Make the maple glaze
  1. Combine the maple syrup, Dijon mustard, apple cider vinegar, garlic, and thyme in a small saucepan.
  2. Bring to a simmer over medium heat and cook for 2 to 3 minutes, stirring, until slightly thickened.
Roast and glaze
  1. Roast the chicken for 15 minutes.
  2. Add the apples around the chicken and roast for 10 minutes.
  3. Brush the maple glaze over the chicken and roast for 15 to 20 minutes, until the thickest part of each thigh registers at least 165°F, the apples are tender, and the glaze is caramelized.
  4. Rest the chicken for 5 minutes before serving.

Notes

Pat the chicken skin very dry before seasoning for better browning. Refrigerate leftovers for 3–4 days; freeze for up to 3 months. For a lower-sodium variation, reduce the kosher salt to taste.
