Method
Prepare the chicken and apples
- Heat the oven to 425°F.
- Brush a 9x13-inch baking dish with 1 teaspoon of the olive oil.
- Pat the chicken thighs dry, season all over with the salt and pepper, and arrange them skin side up in the dish.
- Toss the apple wedges with the remaining 2 teaspoons olive oil and set aside.
Make the maple glaze
- Combine the maple syrup, Dijon mustard, apple cider vinegar, garlic, and thyme in a small saucepan.
- Bring to a simmer over medium heat and cook for 2 to 3 minutes, stirring, until slightly thickened.
Roast and glaze
- Roast the chicken for 15 minutes.
- Add the apples around the chicken and roast for 10 minutes.
- Brush the maple glaze over the chicken and roast for 15 to 20 minutes, until the thickest part of each thigh registers at least 165°F, the apples are tender, and the glaze is caramelized.
- Rest the chicken for 5 minutes before serving.
Notes
Pat the chicken skin very dry before seasoning for better browning. Refrigerate leftovers for 3–4 days; freeze for up to 3 months. For a lower-sodium variation, reduce the kosher salt to taste.
