cream cheese
  • 8 oz cream cheese softened
ranch seasoning mix
  • 2 tbsp ranch seasoning mix
sharp cheddar cheese
  • 1 cup shredded sharp cheddar cheese
green onions
  • 3 green onions thinly sliced
flour tortillas
  • 4 flour tortillas large
unsalted butter
  • 2 tbsp unsalted butter melted
ranch dressing
  • 0.25 cup ranch dressing for serving

Method
 

Cook and prep the bacon
  1. Cook the bacon in a large skillet over medium heat for 8–10 minutes, until crisp, with the fat rendering and the edges turning deep golden brown.
  2. Transfer the bacon to paper towels, cool slightly, then crumble so it mixes evenly into the filling.
Make the ranch filling
  1. Mix the cream cheese and ranch seasoning mix in a medium bowl until smooth, with no visible seasoning lumps.
  2. Fold the cheddar cheese, green onions, and crumbled bacon into the cream cheese mixture until evenly combined, then look for a consistent, speckled filling.
Roll, chill, and slice
  1. Spread the filling evenly over each flour tortilla, leaving about 1/2 inch around the edges so the seams seal while rolling.
  2. Roll each tortilla tightly into a log so the filling is snug and packed together.
  3. Refrigerate the rolled tortillas for 20 minutes to help the pinwheels hold their shape, then chill until firm enough to slice cleanly.
  4. Slice each tortilla roll into approximately 1-inch pinwheels to create even bake times.
Bake and serve
  1. Arrange the pinwheels cut-side up on a parchment-lined sheet pan, keeping them spaced for crisping.
  2. Brush lightly with melted butter so the tops turn glossy while baking.
  3. Bake at 400°F for 12–15 minutes until the tortillas are crisp and golden and the cheddar cheese has melted.
  4. Serve warm with ranch dressing for dipping so each pinwheel gets a creamy contrast.

Notes

Pro tip: Chill the logs until firm before slicing for neat pinwheel rounds with a tight spiral. Store baked pinwheels in the refrigerator for up to 3 days; reheat in a 350°F oven until crisp again. Freezing is not recommended due to texture changes in tortillas. For a lower-fat option, use reduced-fat cream cheese and reduced-fat cheddar (the filling will still melt, but it may be slightly softer).
