Ingredients

  • 6 oz bacon thick-cut, cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed and halved
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet
  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Cook the bacon in a 12-inch skillet over medium heat for 8–10 minutes, stirring occasionally, until crisp.
  3. Transfer the bacon to a paper towel-lined plate.
  4. Toss the Brussels sprouts with the olive oil, kosher salt, and black pepper.
  5. Arrange the sprouts cut side down in a single layer on a large rimmed baking sheet.
  6. Roast for 20–25 minutes, turning the sprouts halfway through, until browned and tender.
  7. Toss the sprouts with the crisp bacon and serve.

Notes

For even browning, arrange the sprouts cut side down in a single layer. Refrigerate leftovers for up to 4 days; freezing is not recommended. For a lighter option, use turkey bacon.
