Ingredients
  

Chicken
  • 2 lb bone-in, skin-on chicken thighs Use boneless, skinless if preferred.
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
Cream Sauce
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.75 cup freshly grated Parmesan cheese
  • 2 oz cream cheese
  • 1 tsp Italian seasoning
  • 0.5 tsp dried thyme
  • 1 tbsp chopped fresh parsley
Garnish
  • 1 Fresh parsley For finishing.
  • 0.25 tsp Freshly cracked black pepper For finishing.
  • 0.25 cup Extra Parmesan cheese Optional extra topping.

Method
 

Preheat and prep chicken
  1. Preheat the oven to 400°F (200°C). Wait until the oven reaches temperature before baking.
  2. Pat the chicken thighs dry and season with garlic powder, onion powder, paprika, Italian seasoning, kosher salt, and black pepper. Lightly press seasoning onto the surface so it adheres.
Sear and build sauce base
  1. Heat olive oil in a large oven-safe skillet over medium-high heat. You want the oil hot enough to sizzle when the chicken touches it.
  2. Sear the chicken thighs skin-side down for 4–5 minutes until golden. Watch for a deep golden-brown color on the skin as the visual cue.
  3. Flip and cook for 2 minutes. Continue cooking until the second side turns lightly browned.
  4. Remove the chicken from the skillet. Transfer to a plate while you make the sauce.
  5. Melt the butter and sauté the garlic for 30 seconds. Stir constantly until fragrant but not browned.
  6. Stir in the chicken broth and scrape up the browned bits. Bring the mixture together so the fond dissolves into the liquid.
  7. Add the heavy cream, cream cheese, Parmesan, Italian seasoning, and dried thyme. Stir until the sauce looks uniform and glossy.
  8. Simmer for 3–4 minutes until smooth. Keep it at a gentle simmer and stir as it thickens.
Bake and finish
  1. Return the chicken to the skillet. Nestle the thighs into the sauce so they heat evenly.
  2. Bake uncovered for 20–25 minutes, or until the chicken reaches 165°F (74°C). Use a thermometer in the thickest part for the temperature cue.
  3. Spoon the creamy sauce over the chicken and garnish with parsley before serving. Finish with freshly cracked black pepper and extra Parmesan cheese if desired.

Notes

For the smoothest sauce, keep the cream at a gentle simmer (not a hard boil) once the cheese goes in. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a covered skillet or microwave until warmed through. Freezing is not recommended due to texture changes in cream. For a lighter version, use half-and-half instead of heavy cream (the sauce may be slightly thinner).
