Ingredients

For the pork
  • 3 lb boneless pork loin roast
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
For the cranberry glaze
  • 1 bag (12 oz) fresh cranberries
  • 0.5 cup light brown sugar packed
  • 0.25 cup balsamic vinegar
  • 0.25 cup water
  • 1 tsp fresh rosemary chopped
  • 0.25 tsp kosher salt

Equipment

  • 1 9x13-inch baking dish
  • 1 medium saucepan

Method

Prepare the pork
  1. Heat the oven to 375°F.
  2. Pat the pork dry.
  3. Rub the pork all over with the olive oil.
  4. Season the pork with the salt and pepper.
  5. Place the pork fat-side up in a 9x13-inch baking dish.
Make the glaze
  1. Combine the cranberries, brown sugar, balsamic vinegar, water, rosemary, and salt in a medium saucepan.
  2. Bring the mixture to a simmer over medium heat and cook for 12-15 minutes, stirring occasionally, until the cranberries burst and the glaze thickens.
  3. Transfer 1/2 cup of the glaze to a clean bowl for serving.
Roast and glaze the pork
  1. Roast the pork uncovered for 40 minutes.
  2. Brush the remaining glaze over the pork.
  3. Return the pork to the oven for 15-30 minutes, until a thermometer inserted into the thickest part reads 145°F.
  4. Transfer the pork to a cutting board and rest for 10 minutes before slicing.
  5. Serve the pork with the reserved glaze.

Notes

For the most reliable doneness, check the temperature in the thickest part of the pork. Refrigerate leftovers for 3-4 days; freeze for up to 3 months. For a lower-sodium variation, replace some kosher salt with salt-free herb seasoning.
