Ingredients

  • 1 nonstick cooking spray for the pan
  • 1 sheet (about 8 ounces) puff pastry frozen, thawed
  • 6 oz Brie cheese cut into 24 small pieces
  • 0.5 cup whole-berry cranberry sauce
  • 0.25 cup pecans finely chopped
  • 1 tsp fresh rosemary finely chopped

Equipment

  • 1 24-well mini muffin pan

Method

  1. Preheat the oven to 375°F.
  2. Lightly coat a 24-well mini muffin pan with nonstick cooking spray.
  3. Cut the puff pastry into 24 equal pieces.
  4. Press one piece of puff pastry into each muffin well.
  5. Divide the Brie, cranberry sauce, pecans, and rosemary among the pastry cups.
  6. Bake for 15–18 minutes, until the pastry is puffed and golden and the Brie is melted.
  7. Let the bites rest in the pan for 5 minutes.
  8. Remove the bites from the pan and serve warm.

Notes

For neat pastry cups, press each piece evenly into the muffin well. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a nut-free variation, omit the pecans.
