Ingredients

  • 4 bacon slices, chopped
  • 1 yellow onion small, diced
  • 1.5 lb green beans fresh, trimmed
  • 2 cup low-sodium chicken broth
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 4-quart Dutch oven

Method

  1. Cook the bacon in a 4-quart Dutch oven over medium heat for 6 to 8 minutes, stirring occasionally, until browned and the fat has rendered.
  2. Add the onion and cook for 4 to 5 minutes, stirring often, until softened.
  3. Add the green beans, chicken broth, salt, and black pepper, and bring to a simmer.
  4. Cover, reduce the heat to low, and simmer for 45 to 60 minutes, until the beans are very tender; stir occasionally and check that the pot remains at a gentle simmer.

Notes

Keep the pot at a gentle simmer for very tender beans without overcooking them. Refrigerate leftovers for 3 to 4 days; freeze for up to 3 months. For a vegetarian version, omit the bacon and use vegetable broth.
