Ingredients
Method
- Preheat the oven to 400°F.
- Cut about 1/4 inch off the top of the garlic head to expose the cloves. Set it on a piece of foil, drizzle with 1 teaspoon olive oil, and wrap tightly.
- Roast the garlic for 40–45 minutes, until the cloves are soft and golden.
- Heat the remaining 1 tablespoon olive oil in a 6-quart pot over medium heat. Add the onion, carrots, and celery and cook for 6–8 minutes, stirring occasionally, until softened.
- Stir in the thyme for 30 seconds.
- Add the chicken broth, chicken breasts, salt, and pepper, and bring to a boil.
- Reduce the heat and simmer gently for 15–20 minutes, until the chicken reaches 165°F in the thickest part.
- Transfer the chicken to a cutting board and shred it with two forks.
- Squeeze the roasted garlic cloves from their skins into the soup, then add the beans.
- Simmer for 5 minutes.
- Return the shredded chicken to the pot and stir in the lemon juice and parsley.
- Serve hot.
Notes
For the best flavor, roast the garlic until the cloves are soft and golden. Refrigerate leftovers for 3–4 days or freeze them; for a vegetarian variation, replace the chicken with extra beans and use vegetable broth.
