Ingredients

  • 2 lb russet potatoes scrubbed and cut lengthwise into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Pat the potato wedges dry.
  4. Toss the wedges on the baking sheet with the olive oil, paprika, garlic powder, onion powder, kosher salt, and black pepper until evenly coated.
  5. Arrange the wedges in a single layer with a cut side down.
  6. Bake for 20 minutes.
  7. Turn the wedges onto the other cut side.
  8. Bake for 15–25 minutes more, until browned and crisp outside and tender when pierced with a fork.

Notes

Pat the wedges thoroughly dry before seasoning so they brown and crisp well. Refrigerate leftovers for 3–4 days; freeze them for up to 3 months and reheat in the oven to help restore their crispness. These wedges are naturally vegan and gluten-free.
