Ingredients

For the cinnamon sugar rim
  • 0.25 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 lemon wedge
For the mimosas
  • 12 oz apple cider chilled
  • 1 bottle (750 ml) prosecco chilled

Equipment

  • 1 shallow dish
  • 6 champagne flutes

Method

Prepare the rim
  1. Stir the sugar and cinnamon together in a shallow dish.
  2. Rub the lemon wedge around the rims of 6 champagne flutes, then dip each rim in the cinnamon sugar.
Make the mimosas
  1. Pour 2 ounces of apple cider into each flute.
  2. Top each flute with about 4 ounces of prosecco and serve immediately.

Notes

For the best bubbles, chill the cider and prosecco well and rim the flutes just before serving. Refrigerate leftover cider for up to 7 days and reseal opened prosecco for up to 3 days; do not freeze. For a nonalcoholic version, swap the prosecco for sparkling apple juice.
