Method
Make the shortbread crust
- Preheat the oven to 350°F.
- Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides, and lightly grease the parchment and exposed sides of the pan.
- Beat 1 cup softened butter with the powdered sugar and 1/4 teaspoon kosher salt until smooth.
- Mix in the flour until evenly crumbly.
- Press the mixture firmly and evenly into the prepared pan.
- Bake for 20-25 minutes, until the edges are pale golden.
Make the salted caramel pecan filling
- Heat the heavy cream in a microwave-safe measuring cup in 15-second intervals until steaming, then set aside.
- Combine the sugar and water in a heavy 2-quart saucepan over medium-high heat.
- Bring to a boil and cook without stirring for 8-12 minutes, until deep amber.
- Remove the pan from the heat and gradually whisk in the warm cream, taking care as the mixture bubbles vigorously.
- Whisk in the remaining 1/2 cup butter, corn syrup, and 1/2 teaspoon kosher salt.
- Return the pan to low heat and stir until smooth, then remove from the heat and cool for 10-15 minutes.
- Whisk the eggs and vanilla in a medium bowl.
- Gradually whisk about 1/2 cup of the warm caramel into the eggs.
- Whisk the egg mixture back into the saucepan until combined.
- Fold the pecans into the caramel mixture.
Bake and finish
- Pour the filling over the baked crust and spread it evenly.
- Bake at 350°F for 30-35 minutes, until the center is set and reaches at least 160°F on an instant-read thermometer.
- Sprinkle the flaky sea salt over the warm bars.
- Cool completely in the pan on a wire rack for at least 3 hours.
- Lift the bars out using the parchment overhang and cut into 24 bars.
Notes
For the deepest caramel flavor, watch for a deep amber color and avoid stirring the sugar mixture as it boils. Store airtight in the refrigerator for up to 5 days; freeze for up to 2 months. For a gluten-free option, use a gluten-free 1:1 baking flour in the crust.
