Ingredients

  • 2 lb carrots baby
  • 3 tbsp butter unsalted, melted
  • 0.33 cup pure maple syrup
  • 0.25 cup light brown sugar packed
  • 0.5 tsp kosher salt
  • 2 tsp cornstarch
  • 1 tbsp water cold

Equipment

  • 1 6-quart slow cooker

Method

  1. Put the carrots in a 6-quart slow cooker.
  2. Stir together the melted butter, maple syrup, brown sugar, and salt.
  3. Pour the mixture over the carrots and toss to coat.
  4. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 1/2 to 3 1/2 hours, until the carrots are fork-tender.
  5. Whisk the cornstarch and cold water in a small bowl until smooth.
  6. Stir the slurry into the slow cooker.
  7. Cover and cook on HIGH for 20 to 30 minutes, stirring once, until the glaze thickens and coats the carrots.

Notes

For the smoothest glaze, whisk the cornstarch and cold water until completely lump-free before stirring it in. Refrigerate leftovers for 3 to 4 days; freezing is possible, though the carrots may soften after thawing. Use vegan butter for a dairy-free option.
