Method
- Put the chicken, potatoes, onion, celery, garlic, salt, pepper, thyme, poultry seasoning, bay leaf, and chicken broth in a 6-quart slow cooker.
- Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until the chicken reaches 165°F and the potatoes are tender.
- Transfer the chicken to a plate and discard the bay leaf.
- Shred the chicken with two forks and return it to the slow cooker.
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk and simmer for 3 to 5 minutes, whisking, until smooth and thickened.
- Stir the milk mixture and frozen vegetables into the slow cooker.
- Cover and cook on HIGH for 20 to 30 minutes, until the vegetables are tender and the soup is hot and creamy.
Notes
For the smoothest finish, whisk the milk in gradually. Refrigerate leftovers for 3 to 4 days; freeze for up to 3 months, noting that the creamy broth may change texture slightly after thawing. For a dairy-free option, use unsweetened oat milk and plant-based butter.
