Ingredients

  • 1.5 lb baby potatoes quartered
  • 2 tbsp olive oil divided
  • 1 tsp kosher salt divided
  • 0.5 tsp black pepper divided
  • 0.5 tsp dried thyme
  • 1 yellow onion large, cut into wedges
  • 2 apples firm, cored and cut into wedges
  • 1 lb turkey sausage raw links

Equipment

  • 1 18x13-inch rimmed sheet pan

Method

  1. Heat the oven to 425°F and line an 18x13-inch rimmed sheet pan with parchment paper.
  2. Toss the potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the thyme, then spread them on the pan.
  3. Roast the potatoes for 15 minutes.
  4. Toss the onion and apples with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper, then add them and the sausage links to the pan in a single layer.
  5. Roast for 20 to 25 minutes, turning the sausage and tossing the vegetables halfway through, until the potatoes are tender and the thickest sausage link reaches 165°F.
  6. Rest for 3 minutes before serving.

Notes

For even cooking, spread everything in a single layer and turn the sausage halfway through roasting. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the apples and potatoes may soften. For a dairy-free meal, no swap is needed.
