Ingredients

  • 4 cups whole milk
  • 0.5 cup canned pumpkin puree
  • 1 tsp pumpkin pie spice
  • 0.125 tsp kosher salt
  • 8 oz white chocolate finely chopped
  • 1 tsp vanilla extract

Method

  1. Whisk the milk, pumpkin puree, pumpkin pie spice, and salt together in a 3-quart saucepan until smooth.
  2. Set the pan over medium heat and cook, whisking frequently, for 5 to 7 minutes, until the mixture is steaming; do not let it boil.
  3. Remove the pan from the heat.
  4. Add the white chocolate and vanilla.
  5. Whisk until the chocolate is completely melted and the drink is smooth.
  6. Serve hot.

Notes

For the smoothest drink, keep the mixture steaming but do not let it boil. Refrigerate leftovers for up to 3 days and reheat gently; freezing is not recommended because the drink may separate. For a dairy-free variation, use unsweetened oat milk and dairy-free white chocolate.
