Ingredients

For the whipped goat cheese
  • 4 oz goat cheese softened
  • 2 tbsp heavy cream
  • 1 tsp lemon juice
For the dates
  • 12 Medjool dates large, pitted
  • 4 bacon slices, cut crosswise into thirds
  • 2 tbsp maple syrup

Equipment

  • 1 hand mixer
  • 1 rimmed baking sheet

Method

Whip the goat cheese
  1. Beat the goat cheese, heavy cream, and lemon juice in a small bowl with a hand mixer on medium speed for 1-2 minutes, until light and fluffy.
  2. Cover and refrigerate the whipped goat cheese while the dates bake.
Bake the dates
  1. Heat the oven to 400°F.
  2. Line a rimmed baking sheet with foil.
  3. Set a lightly greased wire rack on top.
  4. Wrap each date with a piece of bacon.
  5. Place each bacon-wrapped date seam-side down on the rack.
  6. Bake for 15 minutes.
  7. Brush the bacon with maple syrup.
  8. Bake for 5-8 minutes more, until the bacon is browned and crisp.
  9. Let the dates rest for 5 minutes.
  10. Serve warm with the whipped goat cheese.

Notes

For crisp bacon, arrange the dates seam-side down and leave space between them on the rack. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the goat cheese may change texture. For a milder flavor, cream cheese can replace the goat cheese.
