Prepare the casserole
- Heat the oven to 375°F and grease a 9x13-inch baking dish with 1 tablespoon softened butter.
- Cook the egg noodles in a 6-quart pot of boiling water according to the package directions until al dente, then drain.
- Melt 4 tablespoons butter in a 12-inch skillet over medium heat.
- Add the onion and mushrooms, and cook for 7 to 9 minutes until softened and the mushroom liquid has evaporated.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the broth and milk.
- Add the salt, pepper, thyme, and garlic powder and simmer for 4 to 6 minutes, whisking, until thickened.
- Remove the skillet from the heat and stir in the sour cream.
- Combine the sauce, noodles, turkey, and peas in a large bowl.
- Transfer the mixture to the prepared baking dish.
Add the topping and bake
- Toss the panko with the remaining 2 tablespoons melted butter.
- Scatter the panko evenly over the casserole.
- Bake for 30 to 35 minutes until the topping is golden, the edges are bubbling, and the center reaches 165°F.
- Rest the casserole for 10 minutes before serving.
Notes
For an evenly crisp topping, scatter the buttered panko across the casserole in an even layer. Refrigerate leftovers for 3 to 4 days; freeze for up to 2 months. For a gluten-free version, use gluten-free egg noodles, flour, and panko.
