Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion medium, diced
  • 3 cloves garlic minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp ground coriander
  • 1 tsp kosher salt
  • 0.25 tsp black pepper
  • 4 cup low-sodium chicken broth
  • 1.5 lb chicken breasts boneless, skinless
  • 2 can (4 oz) diced green chiles
  • 2 can (15 oz) great northern beans drained and rinsed
  • 2 tbsp fresh lime juice
  • 0.25 cup fresh cilantro chopped

Equipment

  • 1 5- to 6-quart Dutch oven

Method

  1. Heat the olive oil in a 5- to 6-quart Dutch oven over medium heat, then add the onion and cook for 5 to 7 minutes, stirring occasionally, until softened.
  2. Stir in the garlic, cumin, oregano, coriander, salt, and black pepper and cook for 30 seconds, until fragrant.
  3. Add the chicken broth, chicken breasts, and green chiles; bring to a gentle simmer over medium-high heat, then cover and cook over low heat for 18 to 25 minutes, until the chicken reaches 165°F in the thickest part.
  4. Transfer the chicken to a cutting board and let it rest for 5 minutes.
  5. Add the beans to the pot and simmer uncovered over medium-low heat for 5 minutes.
  6. Mash about 1 cup of the beans against the side of the pot to thicken the chili.
  7. Shred the chicken and stir it back into the pot.
  8. Stir in the lime juice and cilantro and cook for 1 to 2 minutes, until the chili is hot throughout.

Notes

For tender chicken, avoid cooking it beyond 165°F in the thickest part. Refrigerate leftovers for 3 to 4 days or freeze for up to 3 months. For a lower-sodium option, use no-salt-added beans and adjust the salt to taste.
