Ingredients

For the goat cheese log
  • 1 package (8 oz) plain goat cheese softened
For the coating
  • 0.5 cup dried cranberries finely chopped
  • 0.5 cup shelled pistachios finely chopped
For the orange honey
  • 0.25 cup honey
  • 1 tsp orange zest finely grated
  • 1 tbsp orange juice

Method

Shape the goat cheese
  1. On a piece of plastic wrap, shape the softened goat cheese into a 6-inch log.
  2. Wrap the cheese tightly.
  3. Refrigerate for 30 minutes, until firm enough to handle.
Coat the log
  1. On a plate, mix the chopped cranberries and pistachios.
  2. Unwrap the cheese.
  3. Roll the cheese in the cranberry-pistachio mixture, gently pressing the coating onto the surface.
Make the orange honey
  1. In a small bowl, stir together the honey, orange zest, and orange juice until smooth.
Serve
  1. Place the log on a serving plate.
  2. Drizzle with the orange honey.
  3. Let stand at room temperature for 15 minutes before serving.

Notes

For easier coating, chill the wrapped log until firm before rolling. Refrigerate covered for up to 3 days; freezing is not recommended. For a dairy-free option, substitute a firm plant-based goat-style cheese.
