Ingredients

  • 6 slices bacon
  • 1 cooking spray for coating the baking dish
  • 2 lb russet potatoes scrubbed and cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 0.5 tsp black pepper
  • 1.5 lb chicken breasts boneless, skinless, cut into 1-inch cubes
  • 2 cups sharp cheddar cheese shredded

Equipment

  • 1 12-inch skillet
  • 1 9x13-inch baking dish

Method

  1. Cook the bacon in a 12-inch skillet over medium heat until crisp, 8 to 12 minutes.
  2. Transfer the bacon to a paper towel-lined plate and crumble when cool.
  3. Heat the oven to 400°F.
  4. Coat a 9x13-inch baking dish with cooking spray.
  5. Toss the potatoes with the olive oil, half of the ranch seasoning mix, and the black pepper.
  6. Spread the potatoes in the prepared dish.
  7. Bake the potatoes for 30 to 35 minutes, stirring once halfway through, until fork-tender and browned at the edges.
  8. Toss the chicken with the remaining ranch seasoning mix in a clean bowl.
  9. Arrange the chicken over the potatoes.
  10. Bake for 15 to 20 minutes, until the chicken reaches 165°F in the thickest pieces.
  11. Sprinkle the cheddar and crumbled bacon over the casserole.
  12. Bake for 5 minutes, until the cheese is melted.
  13. Let the casserole rest for 5 minutes before serving.

Notes

For evenly cooked chicken, cut the breasts into uniform 1-inch cubes. Refrigerate leftovers for 3 to 4 days; freezing is suitable, though the potatoes may soften after thawing. For a gluten-free option, check that the ranch seasoning mix is certified gluten-free.
