Ingredients

For the biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon fine salt
  • 10 tablespoons unsalted butter divided; 6 tablespoons cold for the biscuits, 4 tablespoons softened for the honey butter
  • 0.75 cup buttermilk cold
  • 1 teaspoon neutral oil divided
For the honey butter
  • 2 tablespoons honey

Equipment

  • 1 6-quart air fryer

Method

Make and air-fry the biscuits
  1. Preheat a 6-quart air fryer to 350°F for 3 minutes.
  2. Whisk the flour, baking powder, baking soda, and salt in a large bowl.
  3. Cut in 6 tablespoons cold butter until the mixture has pea-size pieces.
  4. Pour in the buttermilk and stir just until a shaggy dough forms.
  5. Turn the dough onto a lightly floured surface and fold it over itself 3 times.
  6. Pat the dough into a 3/4-inch-thick rectangle and cut out 8 biscuits with a 2-inch cutter, pressing straight down without twisting.
  7. Brush the air-fryer basket with 1/2 teaspoon oil.
  8. Arrange 4 biscuits in a single layer without touching.
  9. Air-fry at 350°F for 10–12 minutes, until deep golden and cooked through; repeat with the remaining oil and biscuits.
  10. Transfer the biscuits to a wire rack and let them rest for 5 minutes.
Mix the honey butter
  1. Mash the softened butter with the honey in a small bowl until smooth.
  2. Serve the honey butter with the warm biscuits.

Notes

For tender biscuits, keep the butter cold and avoid twisting the cutter. Store in an airtight container at room temperature for up to 2 days; freeze for up to 2 months. For a dairy-free variation, use plant-based butter and an unsweetened plant-based buttermilk substitute.
