Ingredients

For the filling
  • 2 oz goat cheese softened
For the dates
  • 12 Medjool dates large, pitted
  • 6 slices bacon thin-cut, cut in half crosswise
  • 12 wooden toothpicks

Equipment

  • 1 5- to 6-quart air fryer

Method

Fill and wrap
  1. Preheat a 5- to 6-quart air fryer to 375°F.
  2. Fill each pitted Medjool date with about 1 teaspoon goat cheese, taking care not to overfill it.
  3. Wrap each date with a half-slice of thin-cut bacon and secure it with a wooden toothpick.
Air-fry
  1. Arrange the dates seam-side down in a single layer in the air fryer basket; cook in batches if needed.
  2. Cook at 375°F for 10 to 14 minutes, turning halfway through, until the bacon is browned and crisp.
  3. Transfer the dates to a paper towel-lined plate and let them rest for 3 minutes before serving.

Notes

Take care not to overfill the dates so the goat cheese stays inside as they cook. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a pork-free option, use turkey bacon.
